Berry Turnovers!

My lack of posting was not because I didn’t bake recently. Quite the contrary, I was busy for a week with guests and I baked a lot!

One day I tried out these amazing turnovers! The moment I saw these  here I knew I had to try them, and I definitely wasn’t sorry!

3 sheets puff pastry, thawed

3 oz cream cheese, softened

1/4 cup granulated sugar

1/2 tsp. vanilla extract

1 egg yolk

1 cup mixed frozen berries (thawed)

1/4 cup sugar

2 tsp. lemon juice

2 tbsp. flour

Pinch of salt

Egg wash (one egg beaten with 1 tbsp. of water)

Powdered sugar for the top


Preheat your oven to 375 degrees, line a couple of baking sheets with parchment paper or just butter them and set aside.

In a bowl, add the cream cheese, the sugar, vanilla and egg yolk. Mix it together until smooth and creamy and set aside. In another bowl mix together the berries, sugar, lemon juice, and flour and set aside. Dust some flour on your work surface, and working with one piece of puff pastry at a time, roll it out slightly until it’s about 10” square all around.

Cut your pastry sheet into 9 squares. Dallop about 1/2 tsp. of the cream cheese mixture in the center of each square and top that with about 1/2 tsp. of the berry mixture. Fold in half in a triangle shape and seal the edges pressing with a fork. Brush the top of each turnover with the egg wash and place them in the baking sheet. Make a tiny little slit at the top of each one with a sharp knife. Bake them for about 25 min. or until golden brown, rotating the baking sheets halfway through baking for even baking. Let them cool for a while and dust with powdered sugar and ENJOY!
