I realize that it’s been 15 days since I last posted! It wasn’t necessarily intended, but there were times when I needed to look for some pictures, or I just didn’t feel like blogging…*sheepish grin*
But now I have a really special reason to post. Today was my sister, Becky’s birthday! This is only part 1 as I’m only posting about the breakfast we had. In part 2 I’ll show you the cake we had for her birthday.
So…for Becky’s birthday we had…
I love our waffle iron, and I’ve been using it quite a bit ever since our friends gave it to us!

We usually make them plain, but this time we added some blueberries as a special treat! 🙂
A special seat for someone’s special day!
Okay, we don’t do this everyday, but today we topped our waffles with strawberries and whipped cream! Oh. so. yummy!
So here’s the famous waffle recipe from scratch…
Fluffy Homemade Waffles
Recipe taken from here
2 cups flour
1 Tbsp. baking powder
1 tsp. salt
7 Tbsp. sugar
4 whole egg yolks
1-1/4 cups milk
2 Tbsp. vanilla
1/2 cup oil
4 whole egg whites
In a large bowl sift together the flour, baking powder, salt and sugar. Make a well in the center of the bowl.
In a separate bowl, mix together the egg yolks, milk, vanilla and oil. Pour this into well in the flour mixture and stir well. Stir just until ingredients are moistened.
In a small bowl beat egg whites until stiff. Fold them into the batter.
Cook the batter in your waffle iron according to manufacturer’s instructions.
